Prickly Pear Grantia

Granita of prickly pears is a a typical dish of Sicilian cuisine that is prepared when Prickly Pear is in season. Granita of prickly pears colour will depend on the variety of prickly pear you choose, in Australia the prickly pear resembles a deeper watermelon type shade

Ingredients

Prickly Pear Peeled – 1 Kg

Water: 300 Ml

Sugar: 300 Gr

Glucose: 1 tablespoon

Lemon: 1

Recipe and preparation

Take a pot and put water, glucose and sugar, melt, combine well and then let it cool.   Meanwhile, peel the prickly pear and then pass the fruit through a sieve to remove all the seeds, once you get a puree, add in the lemon juice and stir.

Pour the puree of prickly pears in the syrup and stir well. Pour the mixture into a bowl and then off in the freezer for a couple of hours, stir frequently to remove any ice crystals.
